Amazing Spaghetti Italiano

 Ingredients Needed:

  • 1 lb ground beef or turkey or mixture of both
  • 1 large onion
  • 4-5 cloves of garlic
  • olive oil
  • 1 T oregano
  • 1 T basil
  • 1 t rosemary
  • 1 t thyme
  • ½ t sage
  • ½ t cumin (1t if using ground turkey)
  • dash salt
  • dash pepper
  • 1c chicken or beef stock
  • 1 can diced tomatoes (28 oz)
  • 1 can tomato sauce (28 oz)
  • 1 can tomato paste (6 oz)
  • 1 ½ t sugar (optional)
  • 2 lbs spaghetti noodles

Procedure:

Before starting the sauce, place a pot of water on to boil. It should be boiling by the time your meat is browning, so you can add your noodles then. The noodles are done when they are soft and will stick to the wall when thrown.

Chop onions and garlic and sauté on medium-high with a little olive oil. Add ground beef or turkey and spices, mix well and cook on medium-heat until meat is browned. Add tomato sauce, paste, diced tomatoes, and chicken stock. Mix well. Add sugar if desired and simmer for 10-15 minutes. Serve and Enjoy!

Rice and Beans

This simple recipe is Classic, Cheap and YUMMY!

Ingredients Needed:

  • 2 cans beans (You can make your own and freeze them)
  • 2 cups of rice
  • 4 cups of water

Optional:

  • Grated cheese
  • Salsa
  • Hot sauce
  • Cortido
  • Sour cream
  • Guacamole
  • Pico de gallo

Procedure:

Cook rice in a rice cooker or on the stove by placing 2 cups of rice in 4 cups of hot water, medium heat for 20-30 minutes. Rice is done when all liquid is gone. Heat up 2 cans of beans on the stove. For this recipe, you can use practically any rice – white, basamati, brown, long or short. You can also use several different kinds of beans – pinto, red, black, navy, etc.

Warm beans then serve on top of rice. Top both with grated cheese, salsa or pico de gallo, hot sauce, cortido (a traditional latino condiment), sour cream, and guacamole. You can even add corn for a different flare! Make sure you have some toppings for this dish. The toppings are what really make it good. The more toppings you have, the more delicious your dinner will be!

Bean and Cheese Burritos

Before I got married, I always thought that Burritos were really cumbersome to make. But I found out differently with my husband’s quick and easy burritos!

Ingredients Needed:

  • 8 Flour tortillas. Any size is fine, if you want to fill it with salad like we sometimes do you’ll want to get the bigger ones. (Check out my easy Flour Tortilla Recipe.)
  • 1 can refried beans (Actually I usually make my own refried beans. You can click here for that recipe.)
  • 1 cup grated cheese

Optional:

  • Salsa
  • Hot sauce
  • Cortido
  • Sour cream
  • Guacamole
  • Pico de gallo

Procedure:

  • Lay flour tortillas on a baking sheet and preheat oven to low broil. Spread approx ¼ cut refried beans on each tortilla. Add ¼ cup grated cheese on top. Place sheet in oven and broil for 2-3 minutes.
  • Serve open and top with sour cream, guacamole, salsa, hot sauce, or whatever else sounds good. Sometimes we stuff our burritos with rice and salad too. Fold and enjoy!
